Patrick Sousa is going to Portugal.



Taste of Portugal

Hawaii Kai physician Patrick Sousa won a trip to Lisbon, Portugal, in the recent Dad's Cookin' Now Portuguese Sausage Recipe Contest. He created a Madeira-laced sloppy joe-style sandwich for the Windward Mall competition.

Sousa's prize-winning Gourmet Linguica Madeira calls for Portuguese sausage with casings removed to be sauteed with Maui onion, shallots, garlic, bell peppers, spices, Madeira wine and beef stock. Sousa ladles the rich mixture over fried Portuguese sausage slices heaped onto homemade herb bread.

A cookbook will feature the recipe along with those of other contest finalists. The cookbook will be available at the Hawaii Council on Portuguese Heritage Festa on Sept. 28 and 29 at Kapiolani Park.

Meanwhile, a Taste of Portugal event offers Portuguese cooking demonstrations using a forno, food tasting and entertainment from 10 a.m. to 2 p.m. Saturday at the Waipahu Cultural Garden Park. Free. Call 677-0110.

Chef Alfredo Cabacungan teaches a three-part "Awakening the Dragon - Vietnam" cooking series from 5:30 p.m. tomorrow, Kapiolani Community College; $75. Call 734-9211.

Public tasting starts at noon Saturday, Windward City Shopping Center; free admission. There's also an ice-cream-eating contest.



Emeril on Lanai
